Hi everyone! Today I’m going to share this vegetarian recipe of my own (yes, it’s my own, and I only tired it last night but it turned out to be pretty good… I can safely say this surpassed many tomato rice recipes I’ve tried before 😉
But why Tangerines? Honestly, I couldn’t find any limes or lemons in my kitchen and we have this huge tangerine tree in our garden, so as a substitute, why not use tangerines, right? But actually, I think the tangerine added a slightly different but altogether better flavour to the rice… Give it a try 😉
Things you need:
1 ripe medium size tomato, chopped
1 tbsp of tangerine juice (undiluted)
1 tsp tomato puree
a few scallions (spring onions), chopped
3-4 small onions chopped finely
2 cloves of garlic, crushed and chopped finely
1/2 cup chopped red pepper
1/2 tsp ground cumin
2 tbsp extra virgin olive oil
salt to taste
1 cup of cooked white rice
How to cook:
On a medium size saucepan, heat olive oil, add chopped onion and cook until the onion starts to turn gold, then add garlic and chopped scallion. Keep stirring under reduced heat.
Add red pepper, tomato puree, tangerine juice, ground cumin and lastly the chopped tomato. Keep the heat low and keep stirring until everything is well blended and cooked. Add salt, stir and remove from heat. Mix the cup of cooked rice and serve while it’s warm…
